Watermelon Mojitos
What’s more refreshing on a sweltering summer day
than sweet and juicy watermelon? A cool minty mojito with the farm-fresh fruit as its star ingredient—a Deep South take on the classic Cuban cocktail.

Juice of 1/2 lime
8 to 10 sprigs fresh mint
4 to 5 chunks fresh watermelon, chilled
1 ounce simple syrup, chilled
1 1/2 to 2 ounces lite rum
Club soda

Pour or squeeze lime juice into the bottom of a highball. Add mint leaves. Muddle mint and lime juice for a few seconds. Add watermelon and muddle again. Add simple syrup. Fill glass to the top with ice. Add rum and finish with a squeeze of lime. Garnish with mint and a lime wedge. With a straw or teaspoon, gently stir ingredients in the bottom of the glass and serve.
