Homemade Lemonade

Simple Syrup:
1cup sugar
1 cup water
6 lemons
3 1/2 cups water to dilute

Make the simple syrup: In a saucepan, combine 1 cup water with 1 cup sugar and bring to a boil. Turn the heat to low and stir for 3 to 4 minutes until sugar is completely dissolved. Cool.

Extract the juice from 6 lemons or enough to equal 1 cup of juice. Add the simple syrup and lemon juice to a pitcher. Add 3 1/2 cups cold water and mix well. Taste for sweetness and add more water if desired. Chill. Serve cold over ice with sliced lemons and mint sprigs.
