Madidi
In the kitchen with Chef Lee Craven

Madidi restaurant, located in Clarksdale, has been in operation for more than two years. Owned by local businessman, Bill Luckett and actor, Morgan Freeman, Madidi offers a variety of Southern-inspired dishes with classic French techniques.

Delta Magazine visited Madidi while Chef Lee Craven was in the kitchen creating dishes for the new menu. Try one of his favorites at home:

Seared Farm-raised Sea Bass
over Orange-scented Sweet Potato Dumplings
Serves two

Sweet potato dumplings
2 sweet potatoes
Juice and zest of one orange
1/4 cup corn meal
1/4 cup all-purpose flour
Bake, peel, and mash sweet potatoes. Mix all remaining ingredients and season with salt and pepper. Shape into two-inch dumplings using two spoons to yield six dumplings. Drop dumplings into boiling water for about two minutes. (They will float when done) Sauté dumplings in a hot pan with butter until warm, about two minutes.

Seared farm-raised sea bass fillets:
Preheat oven to 400 degrees. Season two sea bass fillets with salt and pepper. Heat two tablespoons of olive oil in a hot ovenproof sauté pan until smoking. Lay fillets in pan and cook two minutes without turning. Place in the oven for about three minutes to warm.

Roasted Cherry Tomatoes:
Quarter four cherry tomatoes; toss in olive oil with salt and pepper. Roast for about two minutes at 400 degrees.

Corn gazpacho sauce:
1 onion, chopped
1 shallot, chopped
1/2 cup fresh corn
1/2 teaspoon minced garlic
1/2 cucumber, peeled and chopped
1/2 pint heavy cream
1 tablespoon white wine vinegar

Cayenne pepper
Sweat onions and shallots in a hot pan of butter or oil for about five minutes. Add corn; sauté two minutes. Add garlic; cook two more minutes.Add cucumbers and cook for about 30 seconds to 1 minute.
Add cream; bring to a boil. Season with salt and pepper. Add white wine vinegar and a pinch of cayenne pepper. Blend until smooth, about two minutes.
